Adapted from Leanne Campbell's "The China Study Cookbook"
1/3 cup apple cider or rice vinegar or orange flavoured white balsamic (this is a sweet vinegar)
1-2 tbsp lime juice depends on sweetness of mango
1/2 cup mangos diced (frozen works too)
1/2 tsp grated ginger
pinch sea or pink Himalayan salt
Blend together in a blender.
